Craft

A handcrafted journey

Craft doesn't mean everything has to be made by hand.
To me, craft is the patience to keep at something until it is right.
It is understanding every step, respecting time, and taking full responsibility for what you create.
Every batch is kept small so the distiller can taste, record and adjust at every step.

11 steps that make MIAAIM®

01

Pressing fresh cane

Collecting pure cane juice to begin the fermentation process.

02

Reducing the cane syrup

Concentrating the flavour and preparing the base for fermentation.

03

Natural fermentation

Sugar turns into alcohol and the first layers of aroma take shape.

04

First distillation

Separating the raw spirit from impurities and collecting it all for the second distillation.

05

Second distillation

Selecting the finest cut of the spirit, where the flavour and character of MIAAIM® take shape.

06

Purification and accelerated ageing

Softening the structure of the spirit for a harmonious, balanced flavour.

07

Ageing in oak casks

Refining the structure of the spirit and deepening its flavour.

08

Proofing and blending

Adjusting the strength and shaping a distinct flavour style for each expression.

09

Fine filtration and deep chill filtration

Removing impurities so the spirit becomes clearer and smoother over time.

10

Filling and bottling

The finished spirit is filled and bottled to MIAAIM® standards.

11

Finishing

Labelling, checking each Bottle ID and getting ready for moments worth remembering.

Oak cask cellar

Ageing in oak casks

In the cellar, the spirit rests and changes a little every day. Temperature, humidity and time are the three silent craftsmen that give it depth.
The thin layer of char inside each charred oak cask softens harsh notes and brings out aromas of caramel and vanilla.
Each cask has its own log recording the fill date, temperature and regular tasting results. Only casks that pass move on to blending.

One bottle, one Bottle ID

Every bottle of MIAAIM® carries its own Bottle ID on the back label — look it up to see the distillation date, ageing cask and bottling date of your batch.
